About Us
After working as a private chef, I felt encouraged to learn a new skill so I enrolled at the Ecole Chocolat School in Vancouver, BC to learn the art of chocolate making. After completing the course with high honors, I created Little Henry's Chocolates, a company dedicated to producing small batch artisan confections. I source my couverture chocolate from Vintage Plantations in Ecuador. Vintage Plantations is part of the Rainforest Alliance which prohibits the use of pesticides and chemicals. In addition, the cocoa is grown under the canopy of the existing rain forest, rather than tearing it down to make room for cocoa farms. My chocolate source is also against the practices of the slave labor of children, which is often commonplace in the larger chocolate manufacturers.

Ingredients
65% dark chocolate from Ecuador. When I make truffles, I use butter and heavy cream, plus other all natural ingredients. I do not use any preservatives or artificial flavorings in my confections.
Practices (our standards for raising or making our products)
When making small batch artisan confections, I rely on high quality ingredients. Each batch yields only 20-30 truffles which allows me to make them by hand without the use of large enrobing machines, etc.
