About Us
I moved to Boundary County 31 years ago with the ideals of living symbiotically with Mother Earth. I planted a large garden and variety of fruit trees including 100 Mahaleb Cherry root stock I grafted with Rainier, Bing, Royal Ann, Lambert and Montmorency Cherries. Over the years, after much trial, error and research, I’ve developed techniques of growing fruit organically on a larger scale than the typical home orchard with hopes of encouraging resident and commercial growers to do the same.

Only high quality fresh fruit and ingredients are used in the fruit products. All fresh fruit is handled carefully and individually, and is processed and dehydrated using the lowest heat possible. It is then frozen to maintain freshness and nutritional value. In addition to the organic products, frozen Washington-grown sour cherries are used for our non-organic products: sour cherry juice, non-organic gourmet cherry jelly, and the non-organic dried gourmet pie cherries. I, also, contract with local growers to help market and process their organically registered/certified fruit grown to our standards. Accurate production records insure standardization of quality and provide easy reference.

Pack River Yaks

Product Types: Yak Meat - Burgers-Steaks-Roasts. Lean and healthy.

We raise Tibetan Yak on our ranch north of Sandpoint in the Pack River drainage area. Our yak are grass and grass-alfalfa fed, we never use a feed lot. Our yaks are raised under humane conditions. All Natural with no additives or by products. Yak meat is a dark red meat, lean and healthy. All our cuts are boneless so you get more meat for your money. USDA/or State Certified processed and packaged.

In addition to our meats we also sell hair on hides, yak leather, skulls and yak yarn and rovings.

We raise our yaks in the Pack River drainage area located in the Selkirk Mountains between Sandpoint and Bonners Ferry. All natural no animal by products, hormones, antibiotics or additives. Our yaks are raised under humane conditions, no feed lots.

I started making soy candles while working at a resort spa in Colorado. The mission for the resort was natural, renewable and sustainable and soy candles were the perfect fit.

When I moved back to Sandpoint, I wanted to carry on the mission of providing good quality, natural, renewable and sustainable candles at an affordable price so I started my current home-based business. I thoroughly enjoy spreading the benefits of these clean-burning, natural candles.

Little Henry's Chocolates

About Us
After working as a private chef, I felt encouraged to learn a new skill so I enrolled at the Ecole Chocolat School in Vancouver, BC to learn the art of chocolate making. After completing the course with high honors, I created Little Henry's Chocolates, a company dedicated to producing small batch artisan confections. I source my couverture chocolate from Vintage Plantations in Ecuador. Vintage Plantations is part of the Rainforest Alliance which prohibits the use of pesticides and chemicals. In addition, the cocoa is grown under the canopy of the existing rain forest, rather than tearing it down to make room for cocoa farms. My chocolate source is also against the practices of the slave labor of children, which is often commonplace in the larger chocolate manufacturers.

Ingredients
65% dark chocolate from Ecuador. When I make truffles, I use butter and heavy cream, plus other all natural ingredients. I do not use any preservatives or artificial flavorings in my confections.

When making small batch artisan confections, I rely on high quality ingredients. Each batch yields only 20-30 truffles which allows me to make them by hand without the use of large enrobing machines, etc.

Our practices are good soil, weed free,good pruning, and natural fertilizers for strong growth and fragrant flowers.Lavender has its own defense for bugs, but a few spittle bugs are hosed off in the summer.

I have been making cards using rubbers stamps and various art mediums for the past ten years. Lately I have added small boxes or conatiners to hold small gift items. I also like to work with mixed media. Before then I played with watercolor painting and still do some as well as oil painting.

Additional Information
I am thinking that I will make cards and list them, the members can purchase the cards etc. that are posted for the next Wednesday's delivery or make a request for a particular color variation or wording or special kind of card for delivery the following week. I will also have mixed box cards and note cards containing eight cards as well as the altered and box items.

More than a hundred years ago, the Gebardi family took the long journey from Licata, Sicily through Ellis Island and to Chicago, becoming immediately entrenched in the era that led to Prohibition. Handsome Vincenzo Gebardi meets Helen. Young and in love, the two marry secretly. Vincenzo, seeking justice for the murders of his father and step-father, embarks on a life of crime as Al Capone’s chief gunman.

He changes his name to Jack McGurn and becomes known in history as “Machine-Gun Jack McGurn”. In 1929, he is the prime suspect in the St. Valentine’s Day Massacre, the most horrific and bloody gangland slaying in history. Jack is murdered in 1936 (almost to the day of the massacre) with a valentine pinned to his chest. Some believed that he knew too much and had become a liability to the outfit.

Helen carries on, raising her daughter. Four generations later, her family shares the rich heritage of food, passed down from “Nana” Helen...a bounty and blessing of flavor and history.

Today, Christine (Helen & Jack’s great-granddaughter) and her husband David, have married their old-world heritage and the zest of Chicago history to bring you Italian food that restores honor to the family name...Gebardi. Si mangia benĂ©...You’ll eat well!
